"It's a favorite because it's quick, filling, and easy to throw together between calls. More importantly, it brings everyone into the kitchen. Someone's chopping meat, someone's cutting lettuce, someone's mixing the dressing. It turns a simple sandwich into a group effort. At the firehouse, that's what it's about. We really are a big family, and meals like the chopped Italian keep everyone connected."

Ingredients 

Meat & Cheese
  • Genoa salami — 2 lbs
  • Capicola — 2 lbs (hot if available)
  • Pepperoni — 1 1/2 lbs
  • Provolone — 2 1/2 lbs (thick sliced)

Veggies
  • Iceberg lettuce — 2 large heads
  • Roma tomatoes — 8
  • Onions — 2 large
  • Banana peppers or pepperoncini — 2 cups
  • Black olives — 1 cup (optional)

Firehouse Dressing
  • Olive oil — 1 cup
  • Red wine vinegar — 2/3 cup
  • Deli mustard — 1/3 cup
  • Banana pepper juice — 3/4 cup
  • Dried oregano — 3 tbsp
  • Black pepper — 2 tbsp
  • Kosher salt — 1 1/2 tbsp
  • Red pepper flakes — 1–2 tbsp (optional)

Bread
  • Atlantic City rolls — 8–10 (or sub rolls)
  • Mayo — optional

 

Directions 

Build the Chop 

On a large cutting board or flat top: chop it all!! Start with all the meats and provolone first. Chop until coarse but evenly combined. 

Add the Veggies 

Pile and chop: 

  • Lettuce  
  • Tomatoes  
  • Onions  
  • Banana peppers  
Dress It 

Pour the dressing evenly over the entire mixture. Chop and toss everything together until:

  • Well mixed  
  • Fully coated  
  • Still slightly crunchy  

Let sit for 5–10 minutes to allow flavors to come together. 

Assemble 

Add mayo if desired. Load the chopped mixture heavily onto each roll. Press slightly, wrap, and serve. 

Serve

Serve with chips. Keep extra rolls on hand. 

Notes
Built for speed and volume—perfect between calls. Don’t over-chop—texture is everything. Dressing is the engine—don’t skimp.

Best eaten fast between calls. Because it’s Jersey.
